
Wort Cooling
Process description
Before fermentation the original wort must be cooled to between approximately 10°C to 20°C. Cooling usually takes place with water, an alternative cooling medium or with a mechanical cooling device.
Gas application
Instead of mechanical cooling, the cold content of a cryogenic gas can be used to cool the original wort. Liquid carbon dioxide is usually used for this purpose.
