Packaging

Process description

To protect the products from undesirable environmental influences they are packaged airtight. Depending on the size of the facility, this process step will be automated or manual. One of the most common methods is packaging under a protective gas atmosphere.  

Gas application

By packaging under a modified atmosphere (MAP: Modified Atmosphere Packaging) food products are protected from unwanted influences, thereby extending the shelf-life of the products. When packaging baked goods either carbon dioxide, nitrogen or a mixture of the two is used depending on the application.
