Freezing for crunchiness - Nitrogen for wholesale bakery
Eclair, a wholesale bakery in the Belgian town of Mollem, has been getting its liquid nitrogen from Messer since last May. The gas is used to keep the baked products crunchy by treating them in a linear tunnel freezer. In addition, gaseous nitrogen from cylinders is used to whip cream. The company is part of the Carrefour Group and supplies its products to Belgium and France.
